One Pot Meals

     One of the pitfalls about moving across the country with only two suitcases and a carry-on is the extremely limited amount of space you have to shove your entire life into. I've gotten one box shipped to me since I moved, but that still does not grant the luxury of bringing all my precious kitchen gadgets I love (garlic press, I miss you) with me to this new home. But being the savvy and crafty person I am, I improvise!

     I have made breakfast, lunch, and dinner with nothing but the following:
  • 1 - 2.5 Quart covered shallow sauce pan from Calphalon (love this thing)
  • 1 - 5 inch Victorinox mini chef's knife
  • 1 - 4" x 10" bamboo cutting board
  • 1 - Swiss Army knife
  • 2 - fork, spoon, and butter knife
  • 1 - sometimes borrowed plate from roommate
  • 4 - 2 cup plastic storage containers
  • 1 - 24 oz Thermos

     My daily routine is somewhat bland as far as cooking goes. I'm no longer cooking for two, so the motivation to make a nice meal that we both enjoy is gone for the most part. I do still get up the edge to cook, but it has to be thought out. I've only got one pot to do everything in! This makes my meal planning even more essential

     While this certainly poses its own unique challenges, I looked at it the same way I looked at going gluten-free - 5 years ago this month. While you are limited in some aspects, a whole new world opens up. And it does not involve a lot of dishes, thankfully!

     Recently, I came across this wonderful site. The Art of Manliness has quite the selection of simple, mostly one pot dinners that are made in a snap. I tried out one of the recipes for salmon, asparagus, and roasted sweet potatoes and it was delicious. Not to mention ready in a snap and easy clean up! You can find the recipe in the previous link.      Other recipes I've been relying on include the standard potato soup with or without broccoli, roasted potatoes with soft polenta, pasta with various toppings, and vegetable stir fry with tofu. This coming week, I'm going to try out baked tofu, stir fry with scrambled egg added, and polenta coated sweet potato fries. Recipes to follow soon!
